Rib Roast in Mustard Sauce

Ingredients:[ad#ad-1]

-1 garlic clove
-1/2 c. yellow mustard
-2 tbsp. soy sauce
-2 tbsp. salad oil
-1/2 tsp. coarse black pepper
-1/4 tsp. ginger
-4 lbs. boneless rib roast

Press garlic clove into a small bowl. Add the next five ingredients and mix well. Place roast on crack in an open roasting pan. Using a pastry brush, brush roast with half the mustard mixture. Roast in 350 degree oven for 20 minutes per pound for rare (140 degrees on meat thermometer) or until desired doneness. Serves 10.
